Fish Zacuscă

Fish Zacuscă

Fish zacuscă is a traditional Romanian preserve from regions with access to water, made from fried or smoked fish, roasted aubergines, roasted peppers, tomatoes, and onion, slowly cooked together until a thick and aromatic spread is formed. It is preserved in jars and served cold on bread as an appetizer throughout winter.
