Stewed Orach (Garden Orache)
Stewed orach is a traditional spring-summer dish of Romanian home cooking, made from the tender leaves of garden orache (Atriplex hortensis), a garden plant with red or green leaves and a mildly tangy, earthy flavour. Cooked with onion and garlic in oil or lard, thickened with a little tomato paste, and finished with sour cream or lemon juice, it was traditionally served with polenta or homemade bread and a fried or hard-boiled egg on top. A simple, hearty dish deeply rooted in the rhythm of Romanian kitchen gardens.

💡Variations
Orach stew with meat: add 300 g diced pork or lamb, browned separately before sautéing the onion, for a heartier and more traditional version
Orach and rice stew: add 3–4 tbsp rinsed rice together with the orach and increase the liquid with 200 ml vegetable stock — the rice absorbs the sauce and makes the dish more filling
Orach and spinach stew: mix 50% orach and 50% spinach for a milder taste and greener colour — suitable for those unfamiliar with orach
