Soaking Dried Beans

An essential technique in Romanian cooking to reduce bean cooking time and achieve a more even texture.

Steps

Sort and rinse dried beans, removing broken beans and any debris.

Place beans in a large bowl and add cold water, about three times the bean volume.

Soak for 8-12 hours (ideally overnight) at room temperature.

Drain and rinse the beans again before cooking.

Cook in fresh water according to your recipe, adding salt near the end for tender beans.

💡Pro Tips

  • Changing the soak water after 4-6 hours can reduce digestive discomfort.
  • For a quick soak, boil for 2 minutes, turn off heat, and rest covered for 1 hour.
  • Use a large container because beans expand significantly.

⚠️Common Mistakes

  • Skipping soaking - cooking time increases significantly and texture becomes uneven.
  • Using too little soaking water - some beans remain partly hard.
  • Adding salt at the start of cooking - beans may toughen.
