Reheating Stews, Roasts and Meat Dishes
Pork stew, oven roast, boiled pork tenderloin or ribs — meat dishes are among the most frequently reheated Romanian foods. The correct technique keeps the meat tender and juicy, avoiding drying out or overcooking an already-cooked product.
Steps
Remove the dish from the fridge 15–20 minutes before reheating — meat cold at the centre takes longer to reheat and risks drying on the outside before the inside warms through.
Stews and sauced dishes: Place the meat with all its sauce in a lidded pot. Add 3–5 tbsp of water or wine if the sauce has thickened or dried. Reheat over low-medium heat, covered, for 15–20 minutes, stirring gently once or twice.
Roast and unsauced meat: The oven is the best method. Place the sliced or whole meat in an oven dish, add 2–3 tbsp of sauce or water, cover tightly with foil, and reheat at 150–160°C for 20–30 minutes. Target internal temperature: 74°C.
Reheating grilled meat: Thin slices of grilled meat can be reheated quickly directly in a hot pan, 1–2 minutes per side. Add a drop of butter or oil and cover immediately with a lid to create steam — this preserves the juiciness.
Check internal temperature with a thermometer — reheated pork or chicken must reach 74°C at the thickest point. Beef and lamb can be served at 63°C (pink).
💡Pro Tips
- •Add a teaspoon of butter at the end of reheating a stew — finishing with butter makes the sauce glossy and rich, as if freshly made.
- •Oven pork roast reheats excellently with a few spoonfuls of lemon juice or dry white wine added to the covered tray — the acidity reactivates the flavours.
- •Pork ribs and bone-in meat reheat better in the oven at low temperatures (140–150°C) than on the hob — even heat from all directions penetrates better around the bone.
⚠️Common Mistakes
- •Reheating over high heat or in a hot oven — the meat contracts, expels its juices quickly, and becomes dry and rubbery. Low temperature and longer time are always better for reheated meat.
- •Reheating uncovered — the roast or stew dries on the surface and loses moisture. A lid or foil is essential.
- •Slicing the roast immediately after reheating — just as with the initial cooking, meat needs 5 minutes of covered rest for the juices to redistribute.
