Reheating Desserts and Pastry Products

Yesterday's cozonac, cold pies, apple cake, or strudel — Romanian pastry products can be brought back to their original glory with the correct reheating techniques. Cream-based or gelatine-based desserts, however, should not be reheated and are always served cold.

Steps

•

Identify the type of dessert before anything else — dry pastry products (cozonac, pie, strudel, doughnuts) can be reheated; cream-based desserts (diplomat cake, crème caramel, tiramisu, whipped cream) should NOT be reheated and are always served cold.

•

Cozonac and sweet bread: Wrap in foil and reheat at 150°C for 10–15 minutes. The foil prevents the crust from drying out. Alternatively, place slices on a rack in a steam oven, or cover with a damp cloth and microwave for 20–30 seconds on medium power.

•

Apple or cheese pie and strudel: Reheat in the oven at 170°C for 10–15 minutes, without foil, directly on baking paper. Filo and pie pastry regain their crispness only in dry heat — microwave steam or damp heat softens them irreversibly.

•

Doughnuts and fried products: Reheat in the oven at 160°C for 5–8 minutes on a wire rack (not on a flat tray — the base becomes soggy). Never microwave — doughnuts soften and become rubbery.

•

Fruit cakes and tarts: Reheat in the oven at 160°C for 10 minutes, loosely covered with foil. Serve with a spoonful of sour cream or ice cream — the temperature contrast is part of the tasting experience.

💡Pro Tips

  • •Cozonac reheated in foil in the oven tastes as fresh as the day it was baked — this is the secret known to grandmothers with leftover Christmas or Easter cozonac.
  • •Place a small glass of water on the oven floor when reheating dry pastry — the gentle steam slightly hydrates the crumb without softening the crust.
  • •Pastry dusted with icing sugar or glazed should be reheated before re-dusting — the heat dissolves the sugar. Apply fresh icing sugar immediately before serving.

⚠️Common Mistakes

  • •Reheating diplomat cake, tiramisu, or other desserts containing whipped cream or gelatine — the cream melts, the gelatine liquefies, the structure collapses. These desserts are always served cold, directly from the fridge.
  • •Reheating filo pastry pie in the microwave — the filo becomes soft and rubbery instead of crispy. The oven is the only method that restores the crispy texture.
  • •Repeated reheating of pastry products — on the second or third reheating, the pastry becomes dry, crumbly, and flavourless. Reheat only one portion, only once.
